For our quarterly newsletter, we fire some quick Q & A at two of our team, this time it's the turn of our Assistant Manager, Laura and Head Chef, Luke:
Favourite Food – Humous, chicken liver parfait, cous cous, hoi sin pork salad, any kind of dips or platters.
Favourite Drink – Cocktails, especially a good Mojito
Dream Dinner Guest – Brad Pitt, need I say why!
Funniest Work Incident – When a member of bar staff was cleaning the dishwasher just before evening service
and his trousers split.
Best Bit of My Job – The buzz of a full restaurant and you have a good service.
Favourite Colour – Blue, pink and green – not necessarily at the same time!
Music – Kings of Leon, Chase ‘n’ Status, Escape, Ed Sheeran, Ryan Keene
What I do on my days off – Relax at home, sunbathe, housework, going out
Career/Life Aspirations – To run my own restaurant one day
Luke – Head Chef, The Crown At Woodbridge
Favourite Food – Any shellfish, simply cooked (often Pinney’s Orford crabs and lobsters) and washed rind cheeses,
stinkier the better
Favourite Drink – Rum & Coke
Best Meal – Most memorable had to be at Restaurant Gordon Ramsay in London’s Royal Hospital Road, Chelsea:
Pigs Trotter stuffed with Foie Gras, Ham Hock and Morel Mushrooms; Braised Ox Cheek, Cep Ravioli
and a Navarin of Spring Vegetables; Apple Tart Tatin, nearly as good as mine!
My Fantasy Last Supper – At my family home with Bobby Robson – Ipswich Town football manager legend;
Keith Floyd for his food and wine knowledge; Kelly Brook and Sharon Stone – need I say more?;
The Who for their music, George Best – my favourite footballer and for his tips on being a ladies man;
my dad; my best mate Jason
Funniest Work Incident – taking a group of young chefs to look around a farm and one of them slipped,
falling into a pile of cow poo, a real comedy moment
Best Bit of My Job – Being lucky enough to be able to use some amazing ingredients which are sourced locally
and eing able to get the day’s catch of superb fresh fish and shellfish caught in our local waters
Favourite Colour – Blue of course, Ipswich Town through and through!
What I do on my days off –Support the Tractor Boys (Ipswich Town), growing vegetables on my allotment,
playing golf, enjoying a drink or two out
Pet hate – Of course it has to be Norwich City Football Club, tradition if nothing else, sad there won’t be a local derby
next season, just wait until we swap places with them!
Career/Life Aspirations – To carry on being head chef in good kitchens, learning about ddifferent types of cuisine,
owning my own seafood restaurant near to the sea someday and hopefully see Ipswich Town Football Club
win the Premiership!
